Currently the data panel shows a list of possible interpretation values starting with the selected byte.
Is there a way to also do the same and try to interpret the byte as the start of a string, ASCII, UTF-8, UTF-16..... ??

You can use the codepage comparison panel for this. It lists the same bytes with all available codepages.
It doesn't update with the cursor but I guess usually you see in the text part of the hex editor what could be a text.
